The study determined the proximate composition and sensory evaluation of Guinea corn (Sorghum bicolor) meal enriched with soybeans (Glycine max) groundnut (Arachishypogaea) for infant feeding. Three (3) research questions were raised one (1) hypotheses formulated tested at 0.05 significant level. design adopted this is Research Development Design. panelists used comprised forty (40) Nursing Mothers, who have children age 6 month-2 years. presented coded samples produced from a composite seven possible formulations blends groundnut. Sensory Evaluation Score Card, which was filled by participants during testing session. Proximate analysis calculating products Association Analytical Chemists method. One-way Analysis Variance (ANOVA) to test differences in properties samples. Findings revealed that GCS (Guinea Soybean) has highest protein (14.98%) moisture content (48.82%).
